Wilted Greens with Warm Bacon Dressing
serves 4
Ingredients
- 6 C salad greens
- 1/2 C scallions, fine chop
- 4 sl bacon, diced and cooked
- 1/4 C water
- 2 T red wine vinegar
- 2 T lemon juice
Instructions
- Combine the greens and scallions in a bowl.
- Cook the bacon 4 minutes, then add the water, vinegar and lemon juice. Immediately pour over salad and toss. Season with pepper.
- Plate and serve warm.
